Simple Quinoa and Veggies

Simple? Check. Veggie-packed? Check. Delicious? CHECK. Packed with tasty ingredients like quinoa, squash, feta, lemon, and chickpeas, this dish will fill you right up, and is great the next day- hello lunch for work! Let’s get into it-this recipe will make about 4 portions.

QUINOA AND VEGGIES
2 cups quinoa (take your pick, traditional white is always good, but try red for extra texture or a mix of the two!)
1 can chickpeas
1 large or 2 small zucchini squashes
1 large or 2 small yellow squashes
8-10 oz. cherry tomatoes
4 TBSP Butter
1/2 cup feta cheese
3-4 Cloves of garlic
3-4 green onions
2 Lemons
Olive Oil
Herb of your choice (recommended Thyme, Rosemary, and/or Herbs de Provence)
Smoked Paprika
Salt and Pepper

Preheat oven to 400. Cut zucchini and yellow squash into cubes, leaving the skin on. Mince garlic. Slice green onions, separating green from white. Cut cherry tomatoes in half. Drain, rinse, and pat dry chickpeas.

Place zucchini, yellow squash, and tomatoes on a sheet pan with a drizzle of olive oil, herbs, and plenty of salt and pepper. Pour chickpeas on a separate pan and sprinkle a desired amount of smoked paprika on top. Place in over for 15-18 minutes or until veggies are tender and chickpeas are crisp. Flip veggies halfway through cooking.

Cook the quinoa according to the package. In a small skillet, melt butter and saute garlic, onion whites, salt, and a pinch of herbs until fragrant. When quinoa is done cooking, pour the mixture on top and mix well.

Roll lemon to release juices and cut in half. After placing quinoa, veggies, and chickpeas in a bowl, top with onion greens, 2 tablespoons of feta, and juice from half a lemon. Enjoy!

This dish is definitely in my top three favorites. It is so filling and is brimming with a flavor that you will not believe- the lemon really takes it over the top! AND this dish is so easy to make with whatever you have on hand! No zucchini but you do have a pack of frozen broccoli? Go for it!
