Copycat Carrabba’s : Linguini Toscana

For years, Taglirini Picchi Pacchiu (now Linguini Toscana) was my go-to order at Carrabba’s until I learned how fast and easy it was to make! Full of flavor and budget-friendly ingredients, this dish is a staple in our meal rotation and I just know it will be in yours too!

Copycat Linguini Toscana for Two

2 28oz Cans Whole Peeled Tomatoes
1 Clove Garlic (less if you don’t love garlic like me!)
1 Pack of Fresh Basil
16 oz pasta – linguine or fettucini
Plenty of olive oil, salt, pepper, herbs de provonce (or Italian seasoning), shaved parmesan for garnish

Chop basil. Slice garlic into thin rounds and cook in about 1/2 cup olive oil until fragrant. Pour tomatoes into a strainer and crush with hands until you have broken up all the tomatoes into long and small pieces. Pour crushed tomatoes into pan with garlic and add more olive oil, lots of salt, pepper, half the basil, and herbs. Let simmer. You can add olive oil as needed – this is an olive oil based sauce with tomatoes!

Boil pasta according to package in super salty water. Continue to lightly simmer sauce and add more oil as needed. Add crushed red pepper for spice if you want! Plate and top with remaining basil and shaved parmesan. Enjoy with crusty bread!
