
I love making salads with no lettuce. Weird, right? Bell peppers, tomatoes, cucumbers, and onion are among my favorite ingredients, coming together to create a tasty and crunchy side that goes with almost everything! Chopped into tiny pieces, this dish will delight your senses and your tummy. It also makes fantastic leftovers to be eaten alone or with crackers. This is just one way to make this tasty salad, and I just know you are going to love it!
SUPER CHOPPED SALAD
2 Roma tomatoes
1 Cucumber
1 Small Red Onion
1 Bell Pepper (I prefer red or orange for this)
1 TBSP Sugar
1/4 C. White Wine Vinegar
1/3 C. Olive Oil
Herbs de Provonce, to taste
Salt and Pepper
Chop all vegetables into tiny pieces. Combine with vinegar, olive oil, sugar, herbs, pepper, and LOTS of salt. Let sit in fridge before serving for best taste!
*Sugar can be omitted. Fresh garlic and other vinegars are great additions as well!
