
Cooking for family this time of year is not limited to Thanksgiving and Christmas Day. With the holidays comes more family time, which means family dinners! If you are looking for a filling, southern meal to impress some family members with without breaking the bank and spending all day cooking, then look no further! Sure, you could labor over a pot of beans for 12 hours..but do you really have time for that?!
WHAT YOU’LL NEED TO FEED ABOUT 6 HUNGRY PEOPLE
SOUP BEANS
3 jars of Randal’s Pinto Beans
1 onion
2 cloves garlic
Ham Hock (this can be optional if needed!) Salt, Pepper, and a dash of hot sauce
Dice garlic and onion. Mince 1/4 of the onion. Add minced onion, garlic, and ham hock to pinto beans (optional). Add salt and pepper to taste and a dash of hot sauce. Heat soup beans until boiling.
OVEN FRIED POTATOES
5 lb bag Russet Potatoes
1-2 onions
1 Bell Pepper, any color
Oil of choice
Seasonings of choice (I like lawrys, old bay, garlic, salt, and pepper)
Preheat oven to 400. Peel and dice potatoes, onion, and bell pepper. Combine with seasonings (use a lot of seasoning!) and lay on 2-3 baking sheets, without crowding them, with parchment paper. Bake for 20 minutes, turn potatoes, and bake for an addtional 15-20 minutes or until potatoes are soft.
CABBAGE, ONIONS, AND BACON
1 package bacon
1-2 onions
1 bell pepper
1 head of cabbage
Salt, pepper, and/or seasoning salt of choice
Dice onion, pepper, and cabbage. Cook bacon in pan until crispy and remove, leaving grease. Cook pepper, onion, and cabbage in bacon grease until cabbage is wilted but still holds a small crunch. Crumble bacon on top when serving, enjoy!
All you need to do now is make some cornbread (Jiffy is my favorite for a quick meal, don’t judge me!!!), slice some onion, and enjoy your homecooked meal. I hope you love it as much as we do!
